TONZU Tofu Chocolate Cheesecake

This is not dairy free because sometimes it is more important to “reduce” the amount of animal products than eliminate them altogether. Using tofu mixed with dairy products is a unique and balanced way for EVERYONE to enjoy a healthier lifestyle!

Ingredients

CRUST

  • 2 cups crushed malt biscuits
  • 1/4 cup melted butter
  • 2 tablespoons honey

FILLING

  • 225g TONZU Tofu
  • 225g cream cheese, softened
  • 1 egg
  • 170g carob or milk chocolate morsels, melted
  • 1 teaspoon vanilla
  • Whipped cream (optional)

Method

TO MAKE THE CRUST

  • Combine the malt biscuit crumbs, butter and honey. Press into an 8-inch/ 20cm pie dish

TO MAKE THE FILLING

  • In a food processor, or with a mixer at medium speed, blend together the cream cheese, tofu, egg, chocolate and vanilla. You will find that scraping down the sides of the bowl periodically with a rubber spatula will be necessary to allow you to blend all the ingredients. Be sure that all the cream cheese lumps are smoothed. Spoon the chocolate filling into the pie crust. Bake at 350 degrees F/ 175 Celcius for 30 to 45 minutes. Chill well before serving (1 hour plus).

How to Serve

  • This rich chocolate cheesecake will puff up, then settle down and crack like most desserts of it’s kind – You can decorate with whipped cream and grated carob/ chocolate after it has cooled - Delish
