Quick and tasty – These curry-pita sandwiches are great for special luncheons, or a light dinner. The TONZU Tofu holds the curry flavours really well. Either cook with the recommended vegetables, or leave these out and serve the curried TONZU Tofu with a salad in your pita pockets – Flavoursome either hot or cold.

Ingredients
- 2 cups TONZU Tofu, mashed
- 2 tablespoons oil
- 2 cups sliced mushrooms
- 2 cups sliced onions
- 1/2 cup thinly sliced carrots
- 2 cups shredded or sliced cabbage
- 2 1/2 tablespoons margarine or butter
- 2 tablespoons wholewheat flour
- 1 cup water
- 1 tspn salt
- 6 pita breads cut in half
Method
- Heat oil in a large fry pan.
- Add mushrooms and saute for 2 minutes.
- Add onion and carrots, and saute for 2 minutes.
- Add cabbage and saute for 2 minutes more; remove from heat.
- Melt 2 ½ tablespoons margarine/ butter in a small pan.
- Add flour and saute for 30 seconds until lightly browned.
- Mix in curry powder and salt, then add water slowly, stirring constantly.
- Cook, stirring for 1 minute, then mix in TONZU Tofu and cook for one minute more.
- Combine Tofu-curry mixture and fried vegetable mixture in a large bowl, mixing well.
How to Serve
- Stuff pita-pouches with tofu-vegetable mixture – Serve warm or cold.
